DoubleTree by Hilton introduces ‘pie bird’, a new restaurant and bar concept celebrating American cooking traditions. The first ‘piebird’ location is due to open in New York in fall 2025, with subsequent outlets planned for other regions.

DoubleTree by Hilton, a recognized name in the hospitality industry, recently announced the launch of ‘piebird’, a fresh restaurant and bar concept. This new venture is a creation of Hilton’s in-house consultancy, StiR Creative Collective, based on Americana’s nostalgia. The menu will feature a modern twist on American classics and specialty pies, aiming to capture the warmth of a home-cooked meal.

The first ‘piebird’ location is projected to open at DoubleTree by Hilton Hotel Nanuet in Nanuet, New York, in fall 2025. Following this, a second outlet is expected to open at DoubleTree by Hilton Hotel Asheville – Biltmore in Asheville, North Carolina, in early 2026. Additional locations across the United States are planned for later.

The StiR Creative Collective, Hilton’s internal food and beverage development arm, is responsible for redefining hotel food and beverage experiences. The collective has developed several pioneering projects in the past two years. 

The name ‘piebird’ is inspired by the ceramic figurines used to vent steam from covered pies as they bake, a nod to the rich tradition of American cooking. The menu will feature breakfast dishes, sandwiches, salads, and regional cuisines from across the United States. The dessert selection will focus on signature pies that will change seasonally.

The design for ‘piebird’ venues is inspired by DoubleTree’s unique positioning, aiming to create a comfortable and relaxed setting. The interior will feature warm, natural textures and a calm color palette, with floral wallpaper and vintage-inspired artwork and objects to add personality.
