Who would have thought that you would have a healthy, high-protein snack if you put Greek yogurt on rice cakes along with a few other main ingredients?

Imagine putting one of these high-protein rice cakes into your mouth as a healthy dessert or snack.

We don’t have to imagine, as we’ve been making protein rice cakes for the last six months in the CBB kitchen using the best ingredients.

What we enjoy about protein rice cakes is that you can add many ingredients once you’ve added the protein base.

Think of the protein base as ice cream you’d make in your Ninja Creami machine. You need the base to make the best ice cream creations, such as with protein rice cakes.

What are Rice Cakes?

Crispy round rice cakes are made with puffed whole grain brown rice and can be topped with just about anything.

Protein rice cakes are the new viral rage on TikTok and Instagram among the health concious community.

Many bodybuilders, gym and home fitness folks enjoy plain rice cakes as they offer a high volume with 35 calories each.

Although the carb count might be higher rice cakes offer the energy needed to lift weights at the gym or the push to get through a workout.

In the CBB home our protein rice cakes are eaten as part of a snack or dessert after a savoury meal.

Our favourite protein rice cake is topped with peanut butter, vanilla Good Protein powder, Greek yogurt, fresh dates, jumbo roasted peanuts, sliced sweet banana, melted sugar-free chocolate, and flaked sea salt.

Once chilled, the protein rice cakes taste like a variation of a Snickers bar but with bananas.

You can leave the bananas out for the full Snickers bar effect, but bananas add extra sweetness.

Sometimes we don’t slice the bananas but mix them in the food processor with the protein base.

Either way is fine depending on what texture you are looking for.

If there’s an ingredient apart from the protein base that you don’t care for, then swap it out with a healthy alternative you like.

When buying rice cakes, we opt for what’s on sale but typically wait until the price is right.

A good deal on Quaker rice cakes for us is 2/$4, we’ll stock up at that price.

You can use any brand rice cakes you like, but after taste testing what’s available in Ontario, we like Quaker plain rice cakes.

Always read the nutrition label because many rice cakes have added sugar, and you don’t want that if you’re aiming for a healthy treat.

For example, Quaker Rice Cakes only have 70 calories for two rice cakes.

Ingredients Needed To Make High Protein Base For Snickers Banana Rice Cakes

Alternative Toppings

If you don’t like Snickers Protein Rice Cakes, you can make another healthy combination.

You can use your imagination when creating protein rice cakes, using the protein powder and Greek yogurt base.

  • Strawberry Cream Cheese Yogurt Protein Rice Cakes – Base Greek Yogurt and Vanilla protein plus Use 2 tablespoons of Sugar-Free Jello Cheesecake Instant Pudding mix or Fat-Free Vanilla Instant Pudding and 2 tablespoons of cream cheese, 1/2 cup of sliced fresh or frozen strawberries, and 1/2 teaspoon of pure vanilla extract. Swap the strawberries for any other berry.
  • Base Greek Yogurt and Vanilla protein with any berries, – Strawberries, Raspberries, Blackberries, Blueberries, etc.
  • Cherry Garcia with the Base Greek Yogurt and Vanilla protein, fresh or frozen cherries, topped with melted sugar-free chocolate or chocolate chips.
  • Add sugar-free strawberry rhubarb chia jam or any jelly to the Peanut Butter and Banana Protein Rice cakes.
  • Tira Misu Protein Rice Cakes – base mixture, dip rice cakes (instead of lady fingers) in cold espresso, layer the base, top with more base, and unsweetened cocoa. Chill and enjoy.

How To Make Snickers Banana Protein Rice Cakes

  1. In a large bowl, combine the base protein ingredients – Greek yogurt, maple syrup, powdered peanut butter, protein powder, instant pudding, almond milk, and banana (if you want to mash it in or slice it and add as a layer after)—optional – cinnamon and vanilla extract.
  2. Mix until you have a smooth base protein pudding-like consistency.
  3. Line a tray with four plain rice cakes
  4. Add two to three spoonfuls of the base protein mix on top of each one.
  5. This is where you will add sliced bananas if you didn’t add them into the base mixture.
  6. Sprinkle roasted, salted peanuts around.
  7. Open two fresh pitted dates and set them on top of the peanuts
  8. Add 1 tsp coconut oil and sugar-free chocolate chips to a small bowl. Microwave in 20-second intervals until melted.
  9. Spoon the melted chocolate on top of each rice cake.
  10. Add flaked sea salt on top while the chocolate is wet.
  11. Set in the freezer for 3 minutes and then enjoy.
How To Make Protein Rice Cakes Healthy Snack Ideas Snickers Banana

If you’ve ever made date squares before, you know that once they are soft, the mixture can be turned into a caramel-like texture.

By adding maple syrup or sugar-free syrup to the dates and mixing until smooth you’ll have what many people taut as healthy caramel.

Although we’ve made date caramel many times, including a date caramel fudge, we opted to use whole fresh pitted dates for our protein rice cakes.

By all means you can make a date caramel sauce instead which would be just as delicious.

We like the chunk factor, including the sliced bananas and roasted peanuts, but wouldn’t turn a date caramel protein rice cake away. haha!

Ingredients

  • 4 Plain rice cakes
  • 3/4-1 cup Plain Greek Yogurt 0% Milk Fat
  • 2-3 tablespoons of Unsweetened Almond Milk (any nut milk) if needed.
  • 2 scoops Vanilla Whey Isolate or Vegan Protein Powder (We always use Vanilla or Vanilla Cupcake Good Protein – Vegan).
  • 2 tablespoons powdered peanut butter
  • 2 tablespoons Steeves Sugar-Free Maple Syrup
  • 2 tablespoons Sugar-free vanilla or cheesecake instant pudding or light cream cheese
  • 8 pitted fresh dates
  • 1 ripe banana (sliced to use as a layer or mashed to add to the base mixture)
  • 1/2 cup sugar-free chocolate chips
  • 1/2 cup salted jumbo peanuts
  • Flaked sea salt for topping
  • Optional (tsp pure vanilla extract into the base mixture)
  • Optional: (1 teaspoon Pure Ceylon Cinnamon Powder into the base mixture)

Notes

Slice bananas as a layer or add a banana to the base protein mixture

Add Cinnamon and vanilla extract.

Sea salt is imperative as it impacts the taste, similar to a Snickers bar.

The dates represent the caramel of the Snickers bar and are essential.

Use pitted fresh Medjool or Deglet Nour Dates.

Freeze for up to a month and take one out for a snack or dessert.
