Potatoes are a top-tier comfort food and they’re the ultimate shapeshifter. They can be mashed, baked, fried, roasted and more, and each method creates a cozy dish that’s perfect for lunch, dinner or a late-night snack. As far as we’re concerned, they’re the perfect food!

One of the easiest ways to make a potato is to bake it—just scrub the potato, poke a few holes with a fork, and bake at 400°F for about an hour. You can add toppings like butter, cheese, sour cream or chives, or fill it with chili, pulled pork and more. 

But what if it was possible to make a baked potato even better? Content creator @sarahkrafft just shared her genius baked potato hack and we can’t wait to try it.

How to Waffle a Baked Potato

In her video, which she shared on Instagram, she said that you can halve a baked potato and place each of the halves in a greased waffle iron. Then, you close the waffle maker and let the potato cook for about a minute. Open the waffle iron and top the potato with cheese and close the lid. Let it cook until the cheese is crispy (it’ll stick to the waffle maker if you open it too soon) and you have waffled baked potato. 

This recipe reminds us of potato pancakes, but they’re so much easier and these waffled baked potatoes have crispy cheese on the outside and tender potato on the inside, plus a crispy potato skin on the bottom. What could be better than that? 

Sarah tops her waffled baked potato with salt, pepper, sour cream, a drizzle of spicy chili crunch and some honey. The combination is salty, sweet, savory and spicy and we want to eat every bit of it! 

“It needs bacon and chives!!!” someone said in the comments. We agree that would be amazing! Bacon makes most things better, right?

“Okay. You may have awakened something in me,” another person said. We’re feeling all kinds of emotions, too! But mostly we’re just hungry. 

“Look, if that sour cream was whipped goat cheese this would be an $18 appetizer and you all know I’m right,” another person chimed in. We have to agree! This is a culinary masterpiece and it can be made in just a few minutes at home.
