When I tell people that I have six kids, I get a lot of mixed reactions, but one thing I hear over and over is “That must be a lot of fun.” And it is! My life is a whirlwind of activity, from taking kids to sports games and after-school clubs to organizing school projects, our days are full of fun and (let’s be honest) a fair amount of chaos.
Add in all the errands I have to complete to keep our household running, a full-time job and trying to carve out a little “me time” for the gym or even just a quiet moment with coffee, and it’s a lot to juggle. But this is my circus and I’m running it!
Amid all the hustle, feeding my family a healthy dinner can feel like a huge task. That’s why quick weeknight meals are a priority. I need dishes that are fast to prep, easy to clean up and still packed with nutrients to fuel everyone’s busy days. One-pan meals, sheet-pan dinners and slow-cooker recipes are lifesavers, letting me tackle my endless to-do list without sacrificing quality time (or food) with my family.
Recently, I was scrolling the Internet looking for more meals that will help me ensure my crew is well-fed and happy and I ran across a recipe that I used to make a lot, but had forgotten about. Cookbook author and content creator Matthew Bounds (@yourbarefootneighbor) shared the recipe on his TikTok account and it’s one that I need to start making for my family again. It’s easy, delicious and everyone loves it!

What Are Taco Taters?
Bounds calls his version of this recipe Taco Taters, which is in his cookbook, Keep it Simple Y’all. To make his take on this one-pan meal, you need potatoes (any kind), cooking oil, salt, pepper, garlic powder, taco seasoning, ground hamburger, one can of Ro-Tel (canned diced tomatoes and green chiles) and some shredded cheese.
Warm the oil in the pan, then cut the potatoes into bite-size pieces. Cook the potatoes in the oil for about two minutes and then season them with salt, pepper and half a packet of taco seasoning. Let them cook for a few more minutes, then push them to one side of the pan and add the ground beef. Season it with salt, pepper and garlic powder and cook until it’s almost fully brown.
Once the meat is ready, add the rest of the taco seasoning and the full can of Ro-Tel, juice and all. Stir everything together, turn the heat down, put a lid on the pot and let it simmer for about 10 minutes. Once it’s done, turn the heat off. You can soak up some of the grease with a paper towel and replace it with a splash of water to help everything stay moist. Put some shredded cheese on top and put the lid back on and let it sit for a few minutes as the cheese melts from the residual heat.
Put a few big spoonfuls in a bowl and top it all with sour cream and you have a quick, delicious meal that everyone loves!
The great thing about this is that each person can add any toppings they like and make it suit their preferences, which is great when you’re feeding six kids. I like to add green onions, black olives and Frito chips to mine, but you can dress it up however you like.
