How to Make the Viral Carrot Ribbon Salad

This isn’t your average carrot salad. Oh no. It’s one made with elegant, curly ribbons of carrot, thanks to a vegetable peeler. Hall uses rainbow carrots for a colorful presentation, but classic orange works just as well. And no need to peel the skin; it adds flavor and nutrients.

The dressing is built right in the container: Hall dissolves sugar in hot water to create a quick simple syrup, then mixes in fish sauce, sesame oil, lime juice and minced chili for a punchy, balanced vinaigrette.

To keep the ribbons crisp and coiled, he soaks them in ice water for 15 minutes, then tosses them into the vinaigrette with scallions and fresh herbs, like mint and cilantro. Shake it all up in the container for full flavor coverage. You could eat it straight from the tub, but Hall plates the salad and tops it with grilled shrimp, crushed peanuts, extra herbs, and a drizzle of chili crisp for heat and crunch.
