I absolutely love to cook—experimenting with new recipes, creating something delicious from scratch and watching my family enjoy the fruits (and veggies) of my labor is so rewarding. But even for someone who enjoys being in the kitchen, there are days when I need a break. Life gets busy, and sometimes, the thought of spending hours prepping and cooking is just too much.

That doesn’t mean I want to compromise flavor or settle for uninspiring meals, though. Having a go-to list of quick and easy recipes is my secret weapon to keep my family (and my belly) happy. These are meals that come together in minutes but still taste amazing, like creamy pasta dishes, sheet-pan dinners or hearty soups that make people think you spent all day cooking—but you didn’t! They’re simple to make, require minimal cleanup and ensure that I can still put something delicious on the table no matter how busy I am.

Because good food is always a priority, I like to keep a fresh list of meals to try. Content creator Kat Chao (@katchaomeow) shared a lazy day recipe that she says makes great leftovers and I am ready to dive in!

How to Make Egg Roll in a Bowl

Kat called this recipe an Egg Roll In a Bowl and it looked so fresh and fun! There are lots of variations of this recipe online, but to make Kat’s version you’ll need a bag of coleslaw mix, your favorite type of ground meat, rice vinegar, sesame oil, honey or agave syrup, soy sauce, fresh or ground ginger, fresh garlic or garlic powder and some pepper.  

To make the dish, mix the rice vinegar, sesame oil, honey, soy sauce, ginger, garlic and pepper in a measuring cup and set that aside. Next, add the ground meat to a skillet. When the meat is almost finished cooking, pour in the sauce and stir in the slaw mix. Cook until the vegetables are tender. 

She spoons the beef and veggie mixture over some rice and garnishes it with sliced green onions and sesame seeds. 

This looks incredible and it’s so easy to customize. You can easily swap in your favorite type of ground meat—beef, chicken, turkey, lamb or plant-based meat—and you can adjust the sauce based on what you have in your pantry. Kat also mentioned that she loves to use Trader Joe’s frozen garlic and ginger cubes, which was a great reminder to us to pick some up the next time we’re there.
