Actor Timothy Olyphant has been charming audiences for decades, thanks to his starring roles in Justified, Deadwood, The Santa Clarita Diet and more. Off camera, the 57-year-old also happens to be a passionate foodie and he’s not shy about sharing it.
Over the years, when food came up in interviews, Olyphant has shared that he starts his day with steel-cut oatmeal, bananas and berries. He also swears by using standard dairy milk in his coffee. “You gotta live a little,” he says. And not surprisingly, he’s also into the aesthetics of food. He once took a latte art class so he could top his daily cappuccino with a perfect heart.

About 10 years ago, he used his love of food for good and demonstrated with a professional chef how to cook smoked bluefish dip at L.A. Loves Alex’s Lemonade, a charity celebrity cookout organized to support the fight against children’s cancer research. Around the same time, he also starred in this hilarious Omaze video about proper table manners for a fancy meal.
In a casual mention during an interview with Bon Appetit, Olyphant revealed his love for ice cream (he’s only human). His favorite ice cream topping? Honey. That’s it. No chocolate syrup. No rainbow sprinkles. No elaborate sauces. Just a drizzle of honey over cold, creamy ice cream.

Why is Timothy Olyphant’s Favorite Ice Cream Topping So Great?
While Olyphant didn’t elaborate on why he loves honey on ice cream so much, it’s easy to understand the appeal. For starters, honey provides a unique and unexpected flavor you won’t get with something more expected, like hot fudge sauce. It’s sweet (but not too sweet) but also a little earthy, adding dimension to your ice cream.
Honey also works a little like Magic Shell on ice cream, hardening ever so slightly on contact. That adds new texture to your creamy treat, infusing a little texture in every bite.
Finally, honey is accessible. You probably don’t need to run to the store to grab a bottle, like you might with chocolate sauce or caramel. Just pull it out of your pantry and drizzle away.
