Grand escunites are a kind of aquatic life in Monster Hunter Wilds. They kind of look like glow-in-the-dark nautiluses (nautili?).
You’ll need to fish for them as part of a side quest, “Razzle Dazzle,” for Kanya at the Scarlet Forest base camp. This is the fifth and final of her side missions after catching your first fish, a goldenfish, a gravid bowfin, and a “whopper.”

Where to find grand escunites in Monster Hunter Wilds
Grand escunites are only found in the Scarlet Forest. They’re easiest to see at nighttime, and, while it’s not necessary, fishing for them during a plenty helps a lot.

How to catch a grand escunite in Monster Hunter Wilds
Grand escunites (and regular escunites, for that matter) are tricky to fish for because it’s unclear which direction they’re heading — they move in the direction of their shells, but they grab food in the direction of their tentacles.
Your best bet is to move your tentacle jig as close to the grand escunite as you can, and keep reeling slowly. Be patient with this — it’s pretty hard to catch their attention and, even then, they’re pretty hesitant to take the bait. They’re usually pretty slow moving, so you’ll definitely notice when they take an interest.
