There’s nothing better on a cold day than a hot bowl of chili and people can get seriously competitive about this comfort food. It’s not just a meal—it’s a badge of honor for some people, a pot of pride simmering with spices and ego. Whether at cook-offs or family gatherings, chili enthusiasts can get heated about the best way to make a chili, and many won’t share their secret recipe. Beans or no beans? Ground meat or chunks? Mild or mouth-on-fire spices? These debates can divide a room faster than you can say “chili.”
So, what makes a good chili? There are a lot of opinions on that, but the key is a good balance of rich flavors, spices and textures that make you full and happy, whether you’re sitting down to a bowl on a random Tuesday or loading up the toppings for a game day gathering.
Patrick Mahomes (yes, the NFL quarterback for the Kansas City Chiefs) may be known for his incredible arm and leading his team to three Super Bowl victories, but he’s also a well-known foodie and loves to share recipes. He has a chili recipe that he swears by, and it looks absolutely amazing!

How to Make Patrick Mahomes’ Favorite Chili
Mahomes and several other Kansas City Chiefs players shared their recipes in the Kingdom Cookbook. The digital cookbook is only available in the Chiefs mobile app, but it’s definitely worth checking out. “This recipe has become a staple in the Mahomes family that they make often,” reads the recipe intro for the green turkey chili. The recipe is credited to chef Ben, who is the private chef for the Mahomes family.
While many chili recipes have a tomato base, this is a green chili, with green chiles and green enchilda sauce as the base. Instead of the typical beef, chef Ben went with ground dark meat turkey (which has a richer flavor than lean ground turkey). And this is a chili with bean, but instead of kidney beans this version uses white cannelini beans.
To make this recipe, you’ll need ground dark meat turkey, sweet potatoes, garlic and onion, as well as plenty of seasonings. You’ll also need poblano peppers, a couple of other green chiles (mild or hot, depending on your preference), green enchilada sauce, cilantro, canned corn, cannelini beans and chicken stock.
You’ll start by curring up the onions, garlic, sweet potatoes and one poblano chile. Char the other poblano over a gas burner or in the broiler to give it a smoky flavor. Peel and seed it to get it ready to go into the chili base.
To make the base for the chili, puree the charred chile, half of the cilantro stems (we love a no-waste chef hack!), enchilada sauce and the fresh green chiles with the chicken stock and half of the canned corn and beans to give the base a thick, creamy texture without a drop of dairy.
Next up, the turkey. Brown in in a skillet, and while that’s cooking, cook up the onions, garlic and sweet potatoes in a stock pot. Add the browned turkey to the pot with the rest of the corn and beans. Stir in the green chile base and let everything simmer until the flavors meld, which shoudl take about 30 minutes.
Now for the best part: the toppings. The recipe suggests serving the hearty chili with shredded cheese (we think Monterery Jack or pepper jack would be great), sour cream, avocado, lime and cilantro. We’d also add some tortilla chips for crunch.
