Looking for a culinary roadtrip? Elora is become something of a foodie destination and it just got a little better with the impending arrival of Foxy’s Tapas, Cocktails & Bodega with Michelin-trained chef Miles Pundsack-Poe at the helm. 

Set to open on Aug. 1, Foxy’s will be located inside the very swanky and historic Ayrshire Hotel in Elora.

There are plenty of reasons to take a summer weekend to explore Elora: the waterfalls, limestone cliffs, and European-style artistic village. Now, there’s this.

The Spanish-inspired, late-night-leaning tapas room is nestled in one of Elora’s most beautiful heritage buildings, the Ayrshire Hotel, an iconic flatiron building anchoring the core of the village.

Pundsack-Poe’s story is central to the restaurant’s pull. Raised just minutes from Elora, he trained at Stratford Chefs School before building a career that stretches far beyond small-town Ontario: Langdon Hall and Eigensinn Farm early on, then kitchens across Spain, Napa Valley, Montreal, and Shenzhen. His CV includes time at Michelin-acclaimed kitchens such as The Restaurant at Meadowood in California, and stints in Spain’s celebrated culinary scene, including Etxebarri and Echaurren, as well as leadership roles in Asia’s 50 Best–ranked restaurants.

“After spending so much of my career abroad, it felt like the right time to come home,” he says.

Foxy’s Tapas, Cocktails & Bodega embraces Spanish flavours. The menu leans into shared plates, coastal seafood, conservas, and grill-driven dishes, while also embracing local ingredients and foraged foods from the surrounding countryside.

Think: Uni toast finished with kelp oil and citrus, jamón croquettes with Manchego, seabass crudo brightened with orange, clams paired with tomato sorbet, and a grass-fed aged chuleta served with romesco. There’s also flamed octopus with ajo blanco, and a dessert list that includes Basque cake with Ontario fruit and a signature chocolate-and-olive-oil finish on traditional pan con chocolate.

And the Foxy’s drinks offers up a full evening experience: clarified milk punches, sherry-forward builds, tequila and melon combinations, and a frozen seasonal Negroni variation designed for summer patio service. The intent is closer to a Barcelona-style late bar than a traditional small-town dining room.

Elora has long been a day-trip favourite for Torontonians and the beloved Gorge is a major draw as is the village’s walkability and many artsy shops and boutiques.

Foxy’s could make that day or weekend trip a little tastier.
