Somewhere in Singapore, there’s a bar serving a Jellyfish Martini made from an invasive spotted coral jellyfish, and it just got crowned the best bar on the entire planet.

FURA has won World’s Best Bar at the 20th annual Spirited Awards, held in New Orleans as part of Tales of the Cocktail, one of the most respected honours in the global drinks industry. The winners are decided by a judging panel of more than 250 bartenders, bar owners, writers and industry veterans. 

So what makes FURA worthy of the title? Basically, it’s a bar with an existential question at its core: what will we actually be eating and drinking once the planet runs out of the ingredients we currently take for granted? There’s a lot to ponder over here whilst sipping your martini.

FURA was co-founded by chef Christina Rasmussen, who cut her teeth foraging for Noma, the Copenhagen restaurant famous for building its menu around whatever nature happens to be offering up. Her co-founder is bartender Sasha Wijidessa, previously head bartender at Singapore’s cult favourite Operation Dagger, before a stint at Danish distillery Empirical Spirits. 

In their converted shophouse on Amoy Street, the menu revolves around what they call a ‘Journal of Future Food’. Translation: your cocktail is just as likely to contain cell-cultured milk or a mouthful of insect protein as it is gin. Singapore has been keeping tabs on the bar’s sustainability credentials for a while now, and the accolades just keep on coming.

It capped off a big night for FURA, which also picked up Best International Restaurant Bar on the same evening. Asia had plenty to celebrate more broadly too, with the region turning in a standout showing across the ceremony’s international categories, such as Hong Kong’s Bar Leone taking Best International Bar Team, ARGO at Four Seasons Hong Kong winning Best International Hotel Bar, and Bangkok’s legendary Bamboo Bar at the Mandarin Oriental picking up the Timeless International Award. 

Elsewhere on the night, New York’s Bar Snack took Best US Cocktail Bar, with schmuck. named Best New US Cocktail Bar and Takuma Watanabe crowned US Bartender of the Year. London’s Satan’s Whiskers won Best International Cocktail Bar, while Paris’s De Vie took Best New International Cocktail Bar for its zero-ice concept. Writer David Wondrich picked up the Lifetime Achievement Award, marking the awards’ 20th anniversary in fitting style.
