Most of my day isn’t structured around meals—it’s built on snacks. I start with coffee (lots of it), maybe a handful of berries and some gluten-free granola, then grab some popcorn mid-morning. Lunch? More like a mix of cheese, fruit and pretzels. By afternoon, I’m snacking on something crunchy, maybe a spoonful of peanut butter or a piece of chocolate. Dinner is the only real “meal” I get most days, but even then, I’m still picking at leftovers later. Snacking is just easier—quick, tasty and no big commitment. Honestly, I’d rather graze all day than sit down for full meals.
Sometimes, though, I need a snack that’s warm, cheesy, irresistible and more filling than some Goldfish crackers. These Cheesy Chicken Biscuit Bombs, shared by The Pioneer Woman Ree Drummond, are exactly that! They’re golden, gooey and packed with flavor, making them perfect for busy weeknights, parties or just when I need something delicious to keep me going.

How to Make Cheesy Chicken Biscuit Bombs
To make this perfect snack/app or side dish, you’ll need canned biscuit dough, shredded cooked chicken (a Costco rotisserie chicken is perfect for this), shredded cheddar cheese, room-temperature cream cheese (to make it extra creamy), garlic and onion powder, frozen mixed veggies (gotta sneak in a little balance, right?), an egg and salt and pepper.
Preheat your oven to 375° and line a baking sheet with parchment paper (for easy cleanup).
In a bowl, stir the chicken, cheese, cream cheese, garlic powder, onion powder and veggies. Season to taste.
Take each biscuit and gently press it into a little circle. Add a scoop of the cheesy chicken mixture right in the center. Fold the dough around the filling, pinching the edges closed to make sure none of the filling escapes. Place the biscuit dumplings seam-side down on the baking sheet.
Brush the tops with a beaten egg for that golden, bakery-style finish and pop them in the oven for about 15-20 minutes or until they’re golden brown and puffy. Let them sit for a few minutes to cool—if you can wait that long—then dig in and enjoy!
These little bombs of joy are everything you love about a warm, cheesy biscuit, but with an extra burst of flavor inside. Serve them as a snack, appetizer or even a quick dinner with a side of soup.

How to Make This Recipe Your Own
This recipe is great as it is and easy to put together, but it is also highly customizable. You could also swap the garlic and onion powder for buffalo sauce, use Monterey Jack and serve with blue cheese dressing for dipping.
These would be great with BBQ sauce and smoked paprika, too. Use sharp cheddar or pepper jack cheese, mix the chicken with BBQ sauce and serve with extra BBQ sauce for dipping.
You could also replace the chicken with diced ham. Use Swiss and serve with honey mustard, or use sausage, a mix of mozzarella and Parmesan cheese and serve with a garlic butter dip.
