To celebrate Eater’s 20th anniversary, we polled some of our favorite chefs and culinary pros to get their takes on the past, present and future of dining. We also wanted to know—as we gathered for this major milestone—how the experts celebrate. Read on for insider-approved tips to drink and dine your way to the best birthday yet.

Where were you 20 years ago?

Over the last two decades, chefs Niki Nakayama, Missy Robbins, and Dominique Ansel have shaped how we eat today. As we looked back at our own past 20 years, we asked the influential group to share where they were—and what they were doing—in 2005.

Where do you hope the industry will be in the next 20?

Time to look to the future. Our panel of iconic chefs weighed in on what they’re hoping to see in the next two decades—from the way we’re game-planning the menu to the industry’s approach to hospitality and beyond.
