If you’re on a Keto or low-carb diet, you know that missing some of your favorite foods is the hardest part of sticking with it, but if you dig around social media long enough you’ll turn up some great recipes that will help you stay on your eating plan and enjoy some of your favorite foods too.
Content creator @iricksnacks is a great person to follow for low-carb recipes and one of his recent recipes is going on our must-make list immediately. When we saw his high-protein, low-carb version of a calzone it seemed almost too good to be true. He shared the full recipe in the caption of his TikTok video, and it only includes six ingredients.
According to iRick, you’ll need four ounces of ground chicken, six pepperoni slices, two slices of mozzarella, 1/4 cup of grated Parmesan, one beaten egg and Italian seasoning. Once you’ve gathered your ingredients, you season the ground chicken with the Italian seasoning (we’d add some salt and pepper, too) and flatten it into a circle. (Make sure to do this on a piece of parchment paper so it doesn’t stick to your countertop or cutting board.)

Then, you add the pepperoni and the mozzarella to one side of the chicken patty, then fold the whole thing in half so it looks like a calzone. To make sure it’s sealed, you can press down along the rounded edge with a fork. Next, dunk the chicken in egg wash and sprinkle with Parmesan cheese. Air fry the calzone at 400° until it’s brown and crispy on the outside and the chicken is fully cooked, which should take 8-12 minutes, depending on your air fryer. Serve it with a side of marinara sauce.

A few people recommended serving it with Rao’s sauce, and some people said they’d add more seasoning to their chicken, but the beauty of a simple recipe like this is that you can easily customize it to suit your tastes. Switch up the seasonings, stuff the chicken with leftover meats and cheeses in the fridge and serve with your favorite dipping sauce.
