Tristan Delaittre Named General Manager of Hotel Eden

Tristan Delaittre will become general manager of Hotel Eden in Rome effective Oct. 1, 2026.

Delaittre joins Hotel Eden after serving as Dorchester Collection’s corporate director of food and beverage. He held senior leadership positions across Dorchester Collection for more than seven years before the appointment.

As corporate director of food and beverage, Delaittre oversaw food and beverage strategy across Dorchester Collection’s 10 hotels. His responsibilities included developing new concepts for upcoming hotel openings, including The Alba in Dubai in 2028 and Tokyo in 2029.

Before becoming corporate director of food and beverage, Delaittre was food and beverage director at Le Meurice in Paris. He directed operations for the hotel’s restaurants, bars, events and in-room dining, including two-Michelin-starred Restaurant le Meurice Alain Ducasse and Cedric Grolet’s pastry boutique.

Before joining Dorchester Collection, Delaittre worked in hotel, revenue and culinary operations across Europe.
