The new Kirkland Signature Burrata Salad with Balsamic Dressing combines creamy burrata with fresh vegetables and plenty of Mediterranean-inspired flavor. Pair it with one of Costco’s famous rotisserie chickens, and you can have an easy dinner on the table in minutes.

Costco’s New Burrata Salad Is an Easy Side for Busy Weeknight Dinners
The new burrata salad, Costco item #16942, is sold by weight for $7.99 per pound, with most containers coming in at around $18, depending on weight.
And this isn’t a skimpy side salad. Each package comes loaded with spring mix, grape tomatoes, Kalamata olives, fresh parsley, and generous rounds of creamy burrata, with balsamic dressing included for finishing everything off.

That combination gives you plenty of options beyond simply opening the container and serving it as-is. On a particularly hectic night, grab a $5 rotisserie chicken while you’re there, and you have the makings of an easy dinner for around $23. Add some crusty bread, and you have a meal that requires very little effort but still feels like something you’d happily order at a restaurant.
The salad would also make an easy accompaniment to grilled chicken breasts, steak, salmon, or pork chops. And while the weather is still warm, it offers a fresh alternative to the heavier sides that tend to take over once fall is fully underway.
