Heritage, terroir, and a 1,600-bottle cellar — still setting the tone in Québec City.
Few dining rooms in Canada carry a century as convincingly as the Champlain. The restaurant inside Fairmont Le Château Frontenac marks its 100th year in 2026 — and continues to evolve with intent. Built in 1926, following a fire that reshaped the River-view Wing, it was designed to rival the great hotels of its era. That ambition holds: stencilled ceilings bearing French and British emblems, carved oak panelling rising nine feet and a mantel anchored by Champlain’s ship, Don de Dieu. The details are not ornamental — they situate the restaurant within the broader arc of Quebec’s history.
A 2014 restoration sharpened that identity. Majestic woodwork and original ceilings remain intact, now framed by contemporary interventions, including a suspended sculpture tracing the St. Lawrence River from Île d’Orléans to Montreal. Four glass-walled wine cellars, integrated into the space, hold up to 1,600 bottles — a visual focal point and the backbone of the list.
The kitchen is grounded in Quebec terroir. Multi-course menus track the province’s seasons, alongside à la carte options and a Sunday brunch. The cellar underpins the experience (Wine Spectator’s Best of Award of Excellence for 10 consecutive years), while recognition from the Michelin Guide Quebec speaks to its current standing — the experience leans on continuity between place and plate. Chef Tristan Ratcliffe Lambert, with experience across Germain Hotels, the Fairmont Empress, and Marilena, brings a disciplined, ingredient-driven approach that keeps Quebec product front and centre.
Before or after dinner, Bar 1608 (People’s Choice Bar Award 2026) stands on its own: dark woods, leather seating, fireplaces, and a circular brass-and-marble bar set the tone, while cocktails draw on Quebec ingredients and reflect the kitchen’s approach.
At 100 years, the Champlain remains anchored in place — evolving in step with the landscape just beyond its windows.
