Yes, patio season is officially upon us, and Parker Rooftop is ushering in summer with a bold new menu to complement its meticulously crafted cocktail program.

Throw in a stunning view of downtown Vancouver, and you’ve got all the perfect recipe for a sophisticated and fun night out.

Located on the ninth floor of The Parker Hotel, Parker Rooftop is a go-to destination for exceptional ingredients, artful presentation, and sweeping city and sea views.

Its new summer menu blends Japanese-inspired techniques and flavours with premium local ingredients, designed for sharing and social dining.

Think pristine sashimi, flame-seared Aburi sushi, and expertly grilled steaks, all accented with bold ingredients like yuzu, miso, truffle, ponzu, and jalapeño.

While fantastic on their own, these foods pair splendidly with Parker Rooftop’s meticulously crafted cocktails. The artisanal, handcrafted drinks are equal parts striking and flavourful, from the zesty and refreshing Midnight Margarita to the sake-anchored Demon Killer.

And if you’re the safe ride home, not a problem – the lineup of zero-proof cocktails goes above and beyond, with alcohol-free negronis, espresso martinis, peach bellinis, and more on rotation.

The Parker Rooftop Summer Menu is available from 3 p.m. until late daily, and guests can enjoy Golden Hour from 3 to 6 p.m. for a feature-priced menu that includes craft beer, signature cocktails, and small plates like shishito peppers, truffle fries, chicken karaage, shrimp tempura, and more. After all, elevated dining doesn’t have to mean an elevated bill.
