Velas Resorts has appointed Carina Romero as the new General Manager of the Mar del Cabo hotel in Los Cabos, Mexico.
Velas Resorts has announced the appointment of Carina Romero as General Manager of the Mar del Cabo hotel. In her new role, Romero will oversee the 48-suite boutique hotel’s operations, including guest services and food and beverage at the hotel’s restaurant, Encanto Farm & Sea.
Romero has been with Velas Resorts for six years, previously serving as the Food & Beverage Director at the Grand Velas Los Cabos. Her responsibilities there included overseeing the operations of the AAA Five Diamond Cocina de Autor restaurant, which recently received a Michelin star. Romero also contributed to the pre-opening planning for the Grand Velas Boutique Los Cabos, where she developed service standards and operational budgets.
Before joining Velas Resorts, Romero held senior positions in food and beverage management at Conrad Tulum and El Dorado Maroma & Palafitos. Her responsibilities included managing multiple specialty restaurants and bars. Romero holds a Bachelor’s degree in Nutrition from Universidad Autónoma del Estado de Hidalgo and has completed certifications in Six Sigma, Finance for Hotel Executives, and Wine Studies.
Mar del Cabo, the only European Plan offering by Velas Resorts, features 46 one- and two-bedroom suites and two penthouses. The hotel’s restaurant, Encanto Farm & Sea, focuses on using locally sourced ingredients from Baja California producers.
